Watch Agility, not just Adaptability
Dark Souls II does not grant dodge invulnerability directly from a single visible character stat. Agility is the value that affects roll invulnerability and item-use speed. Adaptability raises Agility efficiently, while Attunement also contributes. That is why two characters with similar weapon stats can feel very different when they try to roll through the same swing.
Open the status screen after each small level-up group and watch Agility change. The benefit comes in breakpoints rather than a dramatic improvement from every point, so do not spend souls blindly chasing a large Adaptability number copied from a different starting class. A caster gains some Agility through Attunement already; a melee character usually gets it more directly from Adaptability.
Fix the problem you can describe
If rolls feel late, first check equipment load and whether you are rolling before the attack reaches you. If the timing is right but you still take hits that appear to pass through you, add a few levels toward your next Agility breakpoint and test the same enemy again. Keep enough Vigor, Endurance, weapon requirements, and upgrade materials to make those extra invulnerability frames useful.
Adaptability also improves several resistances and contributes to poise, but it will not replace positioning or stamina discipline. A heavy shield, a slower roll, or a crowded room still needs a different answer.
