The Palamute is transport
Riding a Palamute moves quickly across a map and still lets you sharpen, use many items and gather while mounted. Dismount when you need full weapon control or a Wirebug route the Palamute cannot follow.
Being mounted also lets you gather many items on the move, which helps build an early stock of materials.
The Palico is your support
Palicoes are recruited with support types such as Healer, Assist and Fight. Their learned support moves determine whether they heal, place traps, gather or help attack, so inspect the full move list before hiring one.

Manage them at the plaza
The Buddy Plaza is where you train, recruit and manage buddies, and where the Argosy handles trade requests for selected materials.
Use Argosy trade requests for consumable ingredients you spend regularly, then change the request when your stock is healthy. Getting Started covers the first hours.
